These tasty fish kebabs are easy to make and full of flavour.

Ingredients

  • 500g (18oz) salmon fillet
  • 1 onion, finely chopped
  • 1 tbsp (15g) fresh parsley, finely chopped
  • 1 tsp (5g) curry powder*
  • 1 tbsp (15ml) olive oil
  • 3 tbsp (45ml) lemon juice
  • ¼ tbsp salt
  • 4 tomatoes, halved
  • 1 yellow, green or red pepper
  • 1 courgette, sliced

Method

  1. Cut fish into 1 inch cubes, you need to have at least 16 cubes

  2. To make the marinade mix together the onion, parsley, curry powder, oil, lemon juice and salt

  3. Lay the pieces of fish in the marinade and cover and refrigerate for 10 minutes

  4. Thread four skewers with pieces of fish, courgette, tomato and pepper and repeat

  5. Place on a grill base, baste with the marinade and cook under a hot grill for about 5 minutes each side until cooked.
